oven baked sweet potato fries
2 large sweet potatoes, about 1 ½ pounds each
1 tablespoon vegetable oil
½ teaspoon salt
¼ teaspoon cayenne pepper
½ teaspoon cumin
Preheat an oven to 425 degrees. Peel the potatoes and cut in half lengthwise. Cut each half into 6 wedges. Brush the wedges with oil and arrange on a baking sheet.
Combine the salt, cayenne, pepper, and cumin in a small bowl and sprinkle evenly over the potato wedges.
Bake for 25 to 30 minutes until the edges are crisp and potatoes are cooked through. Cool slightly before serving with Spicy Pumpkin Catsup.
Makes 4 servings.
