bay laurel pears
4 fresh pears, halved and pitted
1⁄2 cup sweet white wine
1 fresh bay leaf
2 tablespoons honey
1 teaspoon vanilla extract
2 tablespoons unsalted butter, cut into small dice and at room temperature
8 slices of vanilla pound cake, or 8 scoops of vanilla ice cream
Preheat the oven to 325 degrees. Arrange pears cut side up in an 8-inch square baking dish. Set aside.
In a small saucepan, combine the wine and bay leaf. Bring to a boil and cook for 5 to 7 minutes, or until reduced by half. Stir in the honey and vanilla until blended. Whisk in the butter until smooth. Pour over the pears. Bake, uncovered, for 20 to 25 minutes, or until the pears are thoroughly heated and soft, but still holding their shape. Remove the bay leaf before serving. Serve the warm pears over pound cake or vanilla ice cream. Drizzle with the remaining syrup.
