grilled bratwurst german potato salad

1 package (19 ounces) Bob Evans Farms Bratwurst
1 (20 ounces) package Bob Evans Diced Home Fries
3/4 cup red wine vinegar
1/4 cup vegetable oil
1 small onion, diced
1 small cucumber, thinly sliced
2 tbsp. chopped chives
2 teaspoons Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
4 dashes hot pepper sauce
Add bratwurst and potatoes to 4 quarts boiling water. Cook for 10 minutes, and then remove bratwurst. Continue cooking potatoes until tender, about 10 additional minutes. Meanwhile, cook bratwurst in a skillet over medium heat until browned and cooked through, about 6 minutes. Thinly slice bratwurst. In a large serving bowl, combine vinegar, oil, onion, cucumber, chives, mustard, garlic, salt, pepper and hot sauce. Gently stir in potatoes and bratwurst. Serve warm or cold. Refrigerate leftovers.
Makes 6 to 8 servings.
