
grilled red onions
4 large red onions, cut into thick slices, rings left intact
1/4 cup fresh lemon juice or cider vinegar
1/4 cup olive oil
1/4 cup Worcestershire sauce
1/4 cup balsamic vinegar
Place onions in two layers in a shallow baking dish. Combine lemon juice, olive oil, balsamic, and Worcestershire sauce. Pour over onions and let marinate at room temperature for at least 2 hours and up to 8, basting occasionally.
Preheat the grill to medium high. Remove onions from the marinade and place on the grill. Grill on one side for 5 minutes and turn carefully to grill on the other for an additional 5 minutes. Remove from the grill and serve with grilled blue cheese burgers, either on the side or as a condiment.
