fresh peach pie
1 baked pie shell½ to 1 cup sugar, depending on
sweetness of peaches
2 tablespoons cornstarch
1 cup boiling water
1 package (3 ounces) peach gelatin
4 large fresh peaches, sliced
Mix sugar and cornstarch in a heavy saucepan. Add boiling water and cook over low heat until thick. Stir in gelatin and remove from heat. Allow to cool. Place sliced peaches in cooled pie shell. Cover peaches with thickened gelatin mixture. Refrigerate until gelatin is set. Serve with whipped cream.
