Pumpkin Cookies

Pumpkin is a vegetable that's not only good for you, but it tastes good too. Little hands won't be able to ignore these pumpkin cookies.
Ingredients
- 1/2 cup butter or margarine
- 1 cup sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice
- 1/2 cup nuts, optional
Directions
Preheat oven to 375 degrees. Put all ingredients into bowl and mix. Drop from teaspoon onto a greased baking sheet. Bake 10 to 12 minutes.
