Try this quick and easy dish any night of the week.
- 1 pound smoked sausage, cut in 1-inch chunks
- 1 14-ounce can diced tomatoes
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 small cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 grinds fresh pepper
- 3 cups cooked rice
Sauté sausage and onion in olive oil until onion turns clear. Add diced bell peppers, garlic, salt, pepper and paprika. Cook another 3 minutes, stirring occasionally. Add rice and diced tomatoes. Mix well. Let simmer for 10 minutes on low heat.
