Allow this recipe to simmer for 1 hour. When buying pork, look for an even pink color, little fat marbling and a thin rim of fat around the edge of the meat.

Ingredients

  • 1 pound cubed pork
  • 2 medium onions, sliced
  • 2 tablespoons margarine
  • 1 can diced or chopped tomatoes
  • 2 medium green peppers, sliced
  • 1 small cabbage, sliced
  • 1 tablespoon paprika
  • Salt, pepper and caraway seed to taste
  • 2 tablespoons sour cream

Directions

Sauté onions in margarine until golden. Add pork; brown all sides slowly. Stir in tomatoes, peppers, cabbage and seasonings. Simmer for 1 hour, stirring occasionally. Just before serving stir in sour cream. Serve over noodles or dumplings.

Makes 6 servings.
