A skillet dinner.

Ingredients

  • 1 pound smoked sausage, sliced
  • 1 onion, diced
  • 1 pepper, diced
  • 2 cloves garlic, minced
  • 2 1/4 cups chicken broth
  • 1 cup converted rice
  • 1 can diced tomatoes, drained
  • 1 cup kernel corn, drained
  • 1 tablespoon Cajun seasoning

Directions

Sauté the sausage, onion, peppers and garlic in a large skillet. Stir in all other ingredients and bring to a boil. Reduce heat, stir, cover and simmer for 25 minutes.
