Feta cheese adds a salty component to this fresh salad.

Ingredients

  • 4 cups diced seedless watermelon, red or yellow fleshed, chilled
  • 1 cup diced feta cheese
  • 1/2 cup fresh mint leaves, cut into thin strips
  • 2 tablespoons extra virgin olive oil
  • Freshly ground black pepper

Directions

Combine all of the ingredients. Chill to blend flavors. Taste and add salt if desired, but feta cheese serves as the salty component.

Makes 4 servings.
