Feta cheese adds a salty component to this fresh salad.
- 4 cups diced seedless watermelon, red or yellow fleshed, chilled
- 1 cup diced feta cheese
- 1/2 cup fresh mint leaves, cut into thin strips
- 2 tablespoons extra virgin olive oil
- Freshly ground black pepper
Combine all of the ingredients. Chill to blend flavors. Taste and add salt if desired, but feta cheese serves as the salty component.
Makes 4 servings.
