Select bright, clean, hard, well-shaped onions with dry skins that crackle and without seedstems or sprouts. Buy onions free from green sunburn spots and other blemishes. Store onions in a cool, dry, dark place to prevent sprouting and decay. Curing must take place for the onions to be stored for any length of time. Cure onions by placing them in a warm, well-ventilated area until the necks are thoroughly dry. Cured onions can be stored in loosely woven or open-mesh containers for several months. To help prevent tearing when cutting onions, try cutting the top and peeling down without trimming off the root or bottom end until the last possible moment. The cells that release the sulfuric compounds that cause tearing are concentrated at the base of the onion, so cutting off the root end last helps to prevent those tears.
