pecansNutrition Pecans contains more than 19 vitamins and minerals—including vitamins A and E, folic acid, calcium, magnesium, phosphorus, potassium and zinc—and studies show that pecans can lower cholesterol and help fight diseases like Alzheimer’s, Parkinson’s, cancer and heart disease. Pecans do contain higher fat, but nearly 90 percent of the fat in pecans is heart-healthy. Pecans are also a good source of protein and fiber and contain no cholesterol or sodium. Pecans are available vacuum-packed in jars, plastic bags and cans. For the best pecans, choose whole nuts in the shell that are heavy and do not rattle when shaken. The shells should not have any cracks or holes. Shelled pecans should be plump nuts and uniform in color and size. Unshelled pecans can be stored in a cool, dry place for three to six months. Shelled pecans can last up to nine month if refrigerated in an airtight container, and up to two years if frozen in an airtight bag.
