chestnutsNutrition Unlike many other nuts, chestnuts are low in fat and calories and provide carbohydrates and some potassium and protein. Eating about six roasted chestnuts offers 10 percent of the recommended daily allowance for thiamin and 15 percent for vitamins B6 and C. When purchasing raw chestnuts, choose firm, plump nuts with no blemishes on the shells. Many stores also carry canned whole chestnuts as well as chestnut pieces and purees. Chestnuts should be stored in a cool, dry location such the refrigerator in a covered container for maximum freshness. To remove the hard shell of a chestnut, cut an “X” into the flat side and bake so the shell will open. After the chestnuts are cooked, the shells will peel off at the “X”. The thin coating beneath the shell can also be removed. Chestnuts can be roasted, boiled, pureed, preserved or candied and are included in many dessert recipes.
